Apple & Cinnamon Baked Oats

About the Recipe

The perfect blend of comfort and nutrition! Featuring jumbo oats soaked in plant-based milk with the natural sweetness of grated apples and a warming hint of cinnamon, it's packed with fibre and flavour. Topped with crunchy nuts, fresh apple slices, a dollop of creamy coconut yoghurt, and a drizzle of honey or maple syrup, it’s a satisfying breakfast that feels like a treat but fuels your day the right way. Prepare it the night before for an easy, nourishing start!

Ingredients

  • 200g jumbo oats

  • 2 apples

  • julienned/coarsely grated

  • 1 teaspoon ground cinnamon

  • 2 handfuls of mixed seeds

  • 1 litre plant-based milk


To Serve:

  • Handful of nuts

  • 2 apples

  • Drizzle maple syrup/honey

  • Dollop of coconut yoghurt

Preparation

  • Preheat the oven to 160°C. In an ovenproof dish stir together the oats, apple, cinnamon, seeds and a good pinch of salt. Pour in the milk and mix everything together.

  • Bake for 30–35 minutes until golden and bubbling. Remove from the oven and stir gently to break up the top layer of oats. Don’t worry if it looks quite loose, it will thicken as it cools.

  • Divide between bowls and serve straightaway, topped with the nuts, apple, maple syrup and a dollop of yoghurt (if using).
