Mashed chickpeas are blended with creamy tahini, a drizzle of olive oil, and a splash of fresh lemon juice for a zesty, nutty flavour. Served on a slice of good-quality sourdough and topped with crunchy pumpkin and sunflower seeds, it’s a nourishing, satisfying option for breakfast, lunch, or a quick snack. Ingredients
1 x 400g tin chickpeas
2 tablespoons tahini
1 teaspoon olive oil
1 lemon
Good quality sourdough
Sprinkle of pumpkin & sunflower seeds
Preparation
Place the chickpeas into a bowl and roughly mash using the back of a fork. Drizzle over the tahini, olive oil, lemon juice and sprinkle with salt and pepper.
Toast 1 slice of bread, then top with ½ of the mashed chickpeas; reserve the remainder for breakfast on day 6 of the plan. Finish with a sprinkle of pumpkin and sunflower seeds.
